Why not get the iPhone Configuration Utility, install it, and then when you get your settings the way that actually works, do a backup with that utility and then in the future, when it gets broken (again!) just connect your iPhone to your computer, fire up the iPCU, and remove the existing profile, and restore it back to the one you want.
